Restaurant Stendhal Da Francesco

The Stendhal Restaurant is a historic establishment in Parma with over 70 years of tradition, located in Sacca di Colorno (PR) on the banks of the Po River. For decades it was run by the Morini family, “da Bruno”, who with passion introduced thousands of guests to the cuisine of the Parma lowlands. After more than 70 years, a new family has taken over the restaurant: the Ambrosini family, who carry on tradition with the same passion as their predecessors. Chef Francesco Ambrosini, Ligurian by birth but Parmigiano by adoption, fell in love with this corner of land and now, together with his wife Eugenia – the extraordinary hostess – welcomes you to embark on a journey through both new and ancient flavors. Francesco trained under renowned masters Angelo Paracucchi and Mauro Ricciardi. After gaining valuable experience in restaurants in La Spezia and Versilia, he arrived in Emilia. One of his proudest moments was in 2011, when he won the RAI UNO culinary competition La Prova del Cuoco in the celebrated segment Il Campanile Italiano, representing the traditional and innovative cuisine of Emilia-Romagna. A member of Les Disciples d’Auguste Escoffier and Prefect for Emilia of the Italian Association of Historical Gastronomy, Francesco embodies both the strength of tradition and the desire to innovate.
